Just a quick lunch I threw together with some leftover chickpeas! Mine were kind of dried out from sitting in the fridge so I used extra veganaise. I also used extra pickle relish and kelp power, because they’re delicious. Find your perfect balance. These measurements are a loose guide.
Quick Chick Mock Tuna
about 1 c. of cooked chickpeas
1-3 tsp. pickle relish
1-2 tbsp. veganiaise
1/2 – 2 tsp. kelp powder
1/2 carrot, chopped
2″ carrot green stems, chopped
2″ carrot green leaves, chopped
salt & pepper (cayenne, optional)
Directions: Add all ingredients to small bowl of food processor or food chopper and pulse to combine. Adjust seasonings to taste. Eat!
