so i just made my fauxy tuna again. i had a whole bag of smaller carrots, so i used 2 this time. my red onion was rotten, so i threw in a large shallot. if you want to use a shallot, i suggest sticking to the 3 tbsp. amount or less! this large shallot ended up being two small ones; a bit too much! i used dijon this time too, so it already had a bite, and cut the veganaise down to about 2 1/2 tbsp. so it’s a little drier, and has a smidge less fat.
