yesterday was a beautiful day in NYC, so we all headed out to central park to lounge in the grass. i had my appointment to meet with my recruiter today about a job, and just wanted to take it easy last night, so no heavy cooking for me. when we got back to brooklyn, we could smell burgers & bar b q, so i decided to have some veggie cheeseburgers for our dinner. i had some green beans and fresh corn on hand, and dinner came together in a snap. (two veggie servings! i’m so proud.) the very simple recipes are down below.
Veggie cheeseburgers:
Vegan Boca Burgers, grilled
whole wheat buns, toasted
Toffutti american cheese slices, melted on to bun tops
lettuce
tomato slices
veganaise, dijon mustard and ketchup
easiest corn on the cob:
3 tbsp. water
3-4 ears of corn, husked
2 qt covered microwaveable dish, or big microwaveable bowl covered with plastic wrap
butter
salt & pepper
clean corn and place into dish with water. cover and microwave for 7 minutes to steam. remove from microwave when ready to serve, and butter, salt & pepper to taste.
easy garlic green beans: (this works great on asparagus too!)
3 cloves garlic, thinly sliced or minced
1 lb green beans, trimmed
1 tsp. lemon juice
olive oil
salt & pepper
pre-heat oven to 400*. put aluminum foil on a cookie sheet and mist it with olive oil. combine garlic, green beans lemon juice salt & pepper together and spread as a single layer, and spray with more olive oil. if you do not have a sprayer (i use a misto!) then a couple of tablespoons should work, so they’re coated.
pop it into oven for 15 – 22 minutes depending on your oven/desired texture. give them a stir halfway through. i left them in for about 22 minutes, and they were like green bean fries. at 15 minutes they were still plump. up to you!
